Nowadays, it is a well-known fact that contamination of salmonella occurs because of many different reasons during raw material assurance in the poultry sector.
Procuring the hygiene of feed to be given to the consumption of animals is of great importance. Hygiene of feed is not only important for animal health and efficiency, but also for contagious diseases that may spread from the source of animal food. To produce feed in good quality of nutrition and to eradicate all risks coming from feed has been a basic principle in animal production. Organic acids do not leave any traces that could create any risks or health problems for living organisms. Thanks to this characteristic, organic acids are indispensable protectors and additives that has a raising effect worldwide in feed production and cultivating animals. Microorganisms that form the natural flora of the digestive system under normal conditions produce organic acids such as lactic acid, acidic acid and propionic acid. It is obvious that if these organic acids are used as feed additives, the balance of micro floras in the digestive system canal will be in favor of beneficial microorganisms. This way, feed hygiene is also maintained.
The Impact Mechanism of Organic Acids: Organic acids corrupt the energy and amino acid metabolism of bacteria by changing the Ph in the cell going through the cells walls of bacteria. It also splits the DNA of the bacteria. Thanks to the antibacterial effect organic acids show on digestive systems of animals, it not only prevents severe health problems but also creates important advantages by protecting businesses from big economic losses.
Propionic acid and formic acid among organic acids in the case of the death rate of Salmonella pullorum in layers, a research to test the effects of development of the microorganism and pH, formic acid and propionic acid has seen that it has dramatically decreased the development of Salmonella pullorum in the crop and caecum (Al-Tarazi and Alshawabkeh, 2003).

The acidic environment created throughout the digestive system also affects the digestive enzyme activities positively. This way, bioavailability of minerals such as calcium, phosphorus, magnesium, zinc and protein and amino acids are increasing.
Organic acids seeing these effects in poultry may only be provided if it is mixed into the feed homogenously and in adequate forms and adequate amounts.
